Roast-toned but spicy; sweet, intricate. Red cherry and nectarine in aroma and cup. Lively, spice-toned acidity; light but buoyantly syrupy mouthfeel. Exceptionally long finish which carry all the aroma and flavour notes from the cup plus an akin to chocolate bar. Rich though fruity finish.
Yirgacheffe is a coffee region in southern Ethiopia that produces distinctive coffees from traditional varieties of Arabica long grown in the region. This is a “natural” or dry-processed version, meaning the beans were dried inside the fruit, encouraging a flavor profile that is less predictable and deeper than the more familiar wet-processed floral- and citrus-toned Yirgacheffe profile. It was produced by 650 small-holding farmers near Chelba Village,
Shade grown, ripe cherries are delivered to the mill for careful sorting, to select only the ripest. The cherries are dried in the sun on raised African beds for approximately 12 - 15 days. In the daytime they are raked and turned periodically to ensure a consistent drying process; covered between 12pm and 3pm to protect them from sun damage and at night time to protect it from rainfall and moisture. Once the coffee has dried to the right level it is milled, graded, sorted and thoroughly handpicked, before being bagged in GrainPro for export from the port of Djibouti.
Growing altitude is between 1,900 - 2,000 meters and varietal is Indigenous heirloom. Soil is fertile, red brown, well drained and 1.5m depth.
