At Finca La Amada and Finca el Venado, traceability is ensured through good separation of the different lots by variety and process. They also produce and develop new plants on their farm, ensuring micro-climate adaptation and improving the performance and quality of their own seedlings. This is done to ensure year-to-year planning, assuring production stability and constant production growth. They perform the harvesting of the cherries in a totally friendly way with nature. On the Pacific slope, these privileged lands have well-defined wet and dry seasons. The fertile volcanic soils of the West Valley produce an excellent cup profile.
