Located high on the slopes of the El Limo mountains, just outside the town of Puyango in Ecuador’s Loja province, Altos de Marfil is a cooperative of 44 small-scale producers dedicated to cultivating exceptional coffee. Here, traditional varieties thrive at high elevations, where the cool climate and rich soils contribute to a slow, even maturation—resulting in complex and flavourful coffees.

Loja, a region renowned for its commitment to quality coffee production, is home to some of Ecuador’s most distinctive cup profiles. With its mountainous landscapes, diverse microclimates, and a deep-rooted coffee culture, Loja has long been a hidden gem in the world of speciality coffee. The farmers of Altos de Marfil embody this tradition, carefully tending to their crops with generations of knowledge and an unwavering passion for their craft.

Washed Processing

The washed process involves removing the outer skin and fruit from the coffee cherries before fermentation. After the cherries are depulped, the beans are fermented for 8 to 72 hours, depending on the conditions, to remove the remaining mucilage. The beans are then washed in fresh water and dried to the desired moisture content. This method enhances the coffee's clean, bright flavour and clarity.
