It's here that farmers, tired of being paid below national prices for their exceptional coffee, united in 2004 to form the Asociación De Caficultores Del Oriente Caucano.  La Piramide is the fruit of their labour, a coffee that embodies the spirit of community and resilience.

Asociación De Caficultores Del Oriente Caucano (Asorcafe)

Founded in 2004, Asorcafe began as a collective of ten farmers who were determined to improve their livelihoods by receiving fair prices for their coffee. Located in the remote municipality of Inzá, nestled in a fertile valley surrounded by elevated mountains, this region is rich in both culture and history, with more than 14 centuries of indigenous traditions.

Through their cooperative, Asorcafe has empowered around 400 small-scale farmers by providing them with better access to markets and higher prices for their harvests. Asorcafe’s journey toward quality has been supported by focused collaborations, resulting in the production of exceptional coffees with a strong emphasis on sustainability, quality, and community development.

Inzá, Cauca

Inzá is a municipality located in the fertile and historically rich valley between the elevated mountains of Huila and Cauca. Known for its connection to ancient indigenous cultures, the region is home to the archeological park of Tierradentro, a UNESCO World Heritage site, which highlights its long-standing cultural heritage.

The region’s fertile land, shaped by the convergence of numerous rivers, provides ideal conditions for coffee cultivation. Although remote, Inzá is a place of remarkable beauty, featuring stunning landscapes, diverse ethnic communities, and a vibrant artisanal culture. Its geographical isolation has historically limited access to markets, but as security has improved, the region is becoming better known for its exceptional coffees, offering both historical and natural allure to those who venture there.

WASHED PROCESS

The washed process involves removing the outer skin and fruit from the coffee cherries before fermentation. After the cherries are depulped, the beans are fermented for 8 to 72 hours, depending on the conditions, to remove the remaining mucilage. The beans are then washed in fresh water and dried to the desired moisture content. This method enhances the coffee's clean, bright flavour and clarity.
