Chiapas, Mexico

Chiapas, located in southern Mexico along the Guatemalan border, is renowned for producing some of the country’s finest coffee. Grown at 1,300 to 1,700 Masl in nutrient-rich volcanic soil, Chiapas coffee is celebrated for its complex flavour profile, often featuring notes of chocolate, nuts, citrus, and lemon, with a smooth, well-balanced body and mild acidity. The region’s Café de Altura beans, cultivated at high altitudes, are particularly prized for their richness and depth. Despite being Mexico’s poorest state, Chiapas produces 40% of the country’s coffee, driven by the dedication of its indigenous farming communities.

Washed Processing

The washed process involves removing the outer skin and fruit from the coffee cherries before fermentation. After the cherries are depulped, the beans are fermented for 8 to 72 hours, depending on the conditions, to remove the remaining mucilage. The beans are then washed in fresh water and dried to the desired moisture content. This method enhances the coffee's clean, bright flavour and clarity.
