This Grade 1 Natural Microlot, a testament to the rich coffee heritage and expert craftsmanship of Ethiopia's Yirgacheffe region, is sourced directly from the renowned Idido Gersi washing station. Grown at high altitudes between 1,900 and 2,200 metres above sea level, the coffee cherries are meticulously hand-picked and sorted before undergoing an extended natural fermentation process with added yeast cultures.  

This unique process enhances the coffee’s complexity and contributes to its distinct flavour profile. Following fermentation, the cherries are carefully dried on raised African beds, ensuring a slow and even drying process that preserves the coffee’s delicate nuances. This limited-availability microlot offers a rare taste of Ethiopian coffee artistry, showcasing the exceptional quality and flavour that can only be achieved through a harmonious blend of nature, tradition, and expertise.

Idido Gersi washing station is located in Idido village, within the Yirgacheffe district, an area renowned for its exceptional coffee. The farmers here cultivate their crops at high altitudes, ranging from 1,900 to 2,200 meters above sea level, which is ideal for Arabica coffee production.

Yirgacheffe has built a distinguished reputation over the years, producing some of the most coveted microlots globally. The region’s combination of high elevation, fertile soil, reliable rainfall, and generations of local expertise contribute to the distinctive and refined quality of its coffees.

Ethiopia Heirloom

The indigenous ‘heirloom’ varietals, which grow naturally in Ethiopia, impart unique and complex flavours to the coffee. These varietals are responsible for the lively, juicy, and often jammy stone fruit notes that shine through, along with floral aromas and hints of chocolate, creating a cup with a creamy body and exceptional depth.

NATURAL PROCESSED

The coffee from Idido Gersi washing station begins with careful sorting of shade-grown cherries to select only the ripest fruit. These cherries are then fermented in sealed, valved tanks with added yeast cultures to enhance and accelerate the natural fermentation process, allowing for richer flavour development.

After fermentation, the cherries are sun-dried on raised African beds for up to 21 days. During the day, the cherries are raked and turned periodically to ensure even drying, and are covered between 12pm and 3pm to protect them from excessive sun exposure. At night, they are covered to shield them from moisture and rainfall.
Once dried to the optimal level, the coffee is milled, graded, and sorted by size. It is then handpicked to ensure only the finest beans are selected, before being bagged in GrainPro for export.
