What is score?

  • The SCA (Specialty Coffee Association) is the global body that sets the standards for specialty coffee. Their scoring system, based on a 100-point scale, evaluates coffees based on various factors like aroma, flavour, acidity, body, aftertaste, sweetness and balance. Coffees scoring 80+ are considered specialty grade, with those scoring 86+ representing the top tier of quality and complexity.

Los Quemados

Located in the heart of Santa María de Dota, San José province, Finca Los Quemados embodies a harmonious blend of tradition, sustainability, and innovation. Established as part of Café Ceres micromill by Stephanny Fernández Elizondo and her mother, Alexandra, in 2019, the farm reflects their shared dedication to crafting exceptional specialty coffee.

Finca Los Quemados benefits from advanced infrastructure, including greenhouse drying spaces, raised beds, and a pulper, all designed to enhance coffee quality while prioritizing sustainability. Stephanny and Alexandra actively participate in environmental training and collaborate with organizations like MAG and ICAFE to implement eco-friendly practices on the farm. Their efforts extend toward earning Bandera Azul ecological certification, underscoring their commitment to preserving the environment.

Stephanny Fernandez Elizondo

Stephanny Fernández Elizondo, alongside her mother, Alexandra, represents a new wave of coffee producers in Costa Rica. With a shared vision of quality and innovation, they established Café Ceres micromill in 2019, creating a space where tradition meets forward-thinking practices.

Stephanny's leadership shines in her meticulous approach to every stage of coffee production, from selecting cherries to experimenting with diverse processing methods. Alexandra's unwavering support and dedication have been integral to building the farm's reputation for excellence.

Together, this mother-daughter duo embodies resilience and creativity, crafting coffees that reflect their passion for sustainability, community, and the art of specialty coffee.

Red Honey Processed

After harvest, cherries were carefully sorted via floatation to remove underripe or overripe fruit, ensuring only the best cherries were selected. The chosen cherries underwent an initial fermentation in plastic bags for 72 hours, intensifying their sweetness and complexity. They were then pulped, leaving a layer of sticky mucilage intact, and fermented for an additional 48 hours in plastic bags.

Finally, the coffee was dried on raised beds for 14 days. During this stage, the beans were turned every two hours to guarantee uniform drying and preserve their vibrant flavours.
