What is score?

  • The SCA (Specialty Coffee Association) is the global body that sets the standards for specialty coffee. Their scoring system, based on a 100-point scale, evaluates coffees based on various factors like aroma, flavour, acidity, body, aftertaste, sweetness and balance. Coffees scoring 80+ are considered specialty grade, with those scoring 86+ representing the top tier of quality and complexity.

What is single origin?

  • Single origin means the coffee comes from one specific region, farm, or cooperative, rather than a blend from multiple places. This allows you to experience the unique characteristics of that area’s climate, soil, and processing methods.

What are tasting notes?

  • Tasting notes describe the natural flavours found in the coffee, such as chocolate, citrus, or floral tones. These are not added flavours but arise from the bean’s variety, growing conditions, and roasting process.

What is the processing method?

  • This refers to how coffee beans are removed from the cherry after harvesting, which influences their final taste.

Kirinyaga, Kenya

Kirinyaga, in Central Kenya, is a fertile and lush region known for its volcanic soils and ideal coffee-growing conditions. Nestled between Mt. Kenya and the Aberdare Range, the region benefits from abundant rainfall and cool temperatures, especially at night, creating a perfect climate for coffee. The high altitude, combined with rich soil, results in coffees with high acidity, full body, and complex ripe fruit flavours. As farmers use shade trees to combat climate change, the beans mature slowly, developing dense, hard beans that offer vibrant and intricate flavour profiles.

Mutira Farmers’ Cooperative Society

This coffee is produced by smallholder farmers who are part of the Mutira Farmers’ Cooperative Society, located in Kirinyaga, Kenya. The cooperative, founded in 1951, supports its members by promoting good agricultural practices and ensuring better market access. This particular lot was processed at Karii Wetmill, built in 1984 near Kerugoya town, with water from the Rundu River used for its washed processing.

The cooperative’s strong leadership and partnerships have helped farmers improve both quality and yield, while 20% of its members are women, highlighting its inclusive and sustainable approach. This coffee is a reflection of the dedication and expertise of the farmers behind it.

Washed Processing

This coffee undergoes a meticulous washed process to enhance its clarity and vibrant flavours. After the cherries are hand-sorted by farmers to remove underripe and overripe fruit, the pulp is removed. The beans are then fermented for 24 to 36 hours under shade, depending on the climate.

Once fermentation is complete, the coffee is washed and graded by density in washing channels before being sun-dried on African beds for 12 to 20 days, weather permitting. To protect the beans from moisture and rain, they are covered with plastic during midday and at night, ensuring a slow, even drying process that preserves their quality and flavour complexity.
