FINCA MONTEBLANCO

Finca Monteblanco is an 18-hectare family farm located in the San Adolfo municipality, above Pitalito. Managed by Rodrigo Sanchez, the farm has a rich legacy of coffee cultivation that started with his grandfather. Positioned on the crest of a hill, the farm’s wet and dry mill sits at the top, with coffee planted across the slopes below.

Finca Monteblanco is committed to maintaining consistent quality through rigorous monitoring and careful management of each stage of production and processing. The farm adapts to a changing climate by spreading out the harvest over ten months, ensuring that quality is maintained year-round. This commitment has led to Monteblanco producing microlots that are used in competitions worldwide.

RODRIGO SANCHEZ

Rodrigo Sanchez’s coffee journey began in 2002 when he participated in a local program teaching children of coffee producers how to cup coffee. This experience helped him understand the connection between farming practices and cup quality. Inspired, Rodrigo began researching ways to consistently produce high-quality coffee. While exploring his farm, he discovered Pink Bourbon, a variety his grandfather had unknowingly planted in the 1980s. In 2014, he planted three hectares of Pink Bourbon at Monteblanco, impressed by its adaptability, productivity, and resistance to leaf rust. This discovery has since become a cornerstone of Rodrigo's commitment to producing exceptional coffee.

WASHED PROCESSING

All cherries are measured for their degrees Brix to determine sugar content, with cherries between 24-27 degrees Brix typically processed as washed coffees. For this lot, cherries reached 27-28 degrees Brix. To ensure consistency, floaters are removed before depulping, which is done on the same day as harvest.

After depulping, the cherries undergo 37 hours of dry fermentation, are fully washed with clean water, and then transferred to a solar dryer for three days. The drying process is completed on shaded raised beds, taking 23-27 days to reach the optimal humidity level of 10.5-11%.
