LAS MARGARITAS, PACAMARA XO, Cauca - Colombia | COMPETITION COFFEE
£24.00
This past August, we travelled to the renowned Café Granja La Esperanza in Colombia, searching for exceptional coffees to bring back to our Coffee Gems community. We were captivated by this Geisha Natural, and to preserve its delicate flavours, we roasted it on our mini roaster brought especially for these beans. This coffee represents our commitment to sourcing and delivering the freshest, highest-quality coffee.
Cultivated at the high altitudes of La Esperanza farm (1648 – 1852 masl) in Caicedonia, Valle del Cauca, this Geisha variety thrives in the region's unique microclimate. This exceptional coffee undergoes a unique natural anaerobic fermentation process. First, the Brix levels are carefully measured to ensure optimal ripeness. Then, the cherries are placed in a controlled anaerobic environment for 168 hours, allowing the coffee's distinctive character to fully develop. This meticulous process enhances the coffee's inherent sweetness and complexity.
Following fermentation, the cherries are dried in mechanical dryers at a constant 38°C for 8 to 12 days, ensuring consistency and preserving the delicate nuances developed during fermentation. Finally, the beans are stored in climate-controlled warehouses, maintaining optimal conditions until they're ready for roasting.
