Sourced from the Los Altos de Chiapas region, this coffee is cultivated by the Tzeltal indigenous communities at high altitudes, renowned for producing exceptional quality.  The name "Bankilal" honours a respected figure in Tzeltal culture, symbolising community care and selfless responsibility.

With a history dating back over a century, coffee cultivation is deeply rooted in the traditions of Los Altos.  Originally brought from Soconusco, coffee plants were integrated into family gardens and later expanded to larger plots. This dedication to preserving their coffee heritage results in a unique and flavourful cup.

Finca Xixintonil

Perched in the municipality of Tenejapa, Los Altos de Chiapas, Finca Xixintonil thrives in a region celebrated for its exceptional specialty coffee. This area, predominantly home to Tzeltal indigenous communities, combines cultural richness with ideal conditions for coffee cultivation.

At Finca Xixintonil, 100% Arabica coffee is shade-grown, a practice that nurtures the environment and enhances the coffee's distinctive character.

Maribel Meza

Maribel, alongside her family, represents a new generation of coffee producers in Xixintonil, Tenejapa. While her father, Sebastián Meza, began cultivating coffee 40 years ago as a commodity crop, Maribel set out to transform their approach and elevate the value of their harvest.

A year ago, Maribel connected with an agronomist from the State of Mexico, whose guidance proved pivotal. Together, they focused on harvesting practices, selecting only the highest-quality cherries, and refining post-harvest techniques. Initially adopting the Washed method, Maribel and her family soon expanded their expertise, experimenting with Natural and Honey processes.

The result of their dedication and innovation was nothing short of spectacular. Their coffees showcased remarkable quality, earning praise and inspiring the family to continue exploring specialty coffee production.

WASHED PROCESSING

The washed process involves removing the outer skin and fruit from the coffee cherries before fermentation. After the cherries are depulped, the beans are fermented for 8 to 72 hours, depending on the conditions, to remove the remaining mucilage. The beans are then washed in fresh water and dried to the desired moisture content. This method enhances the coffee's clean, bright flavour and clarity.
