Huila, Colombia

Located in southern Colombia, where the Andes mountains converge. The region is known for its cool climate, fertile soil, and focus on quality coffee production. Smallholder farmers in the Pitalito area produce specialty coffees, with selective harvesting and careful processing. The Departmental coffee committee provides training to improve farming techniques. Huila also holds historical significance, with the San Agustin archaeological site offering insight into pre-Columbian cultures.

Sugar Cane Process

Our decaf stands out not just for its quality but also for the way it’s made. Selected for their exceptional flavour, the beans undergo a natural decaffeination process using ethyl acetate (EA), a compound derived from sugarcane.

The process begins by soaking the green coffee in an EA solution, which binds to the caffeine and removes it while preserving the coffee’s natural flavours. The beans are then steamed at low pressure to eliminate any remaining traces of EA. The result? A coffee that retains its full character—just without the caffeine.
