What is score?

  • The SCA (Specialty Coffee Association) is the global body that sets the standards for specialty coffee. Their scoring system, based on a 100-point scale, evaluates coffees based on various factors like aroma, flavour, acidity, body, aftertaste, sweetness and balance. Coffees scoring 80+ are considered specialty grade, with those scoring 86+ representing the top tier of quality and complexity.

What is single origin?

  • Single origin means the coffee comes from one specific region, farm, or cooperative, rather than a blend from multiple places. This allows you to experience the unique characteristics of that area’s climate, soil, and processing methods.

What are tasting notes?

  • Tasting notes describe the natural flavours found in the coffee, such as chocolate, citrus, or floral tones. These are not added flavours but arise from the bean’s variety, growing conditions, and roasting process.

What is the processing method?

  • This refers to how coffee beans are removed from the cherry after harvesting, which influences their final taste.

About The Farmers

El Cansado is grown by 55 dedicated smallholder farmers near the city of Oaxaca, in the mountains of southern Mexico. Coffee cultivation in this community runs deep, as many of these families have been growing coffee for more than three generations. For them farming is not just a livelihood but a heritage. All farmers are certified organic, practicing traditional methods and producing their own compost, with certification costs covered by import partner Caravela so that every farmer can access the specialty coffee market on equal footing.

Monte Alban

The coffee farms sit in the surrounding highlands near Oaxaca, where the cool mountain air, rich soils and unique microclimate create ideal conditions for growing coffee of real character and complexity. It is a region where coffee and culture are truly inseparable, watched over by the ancient Zapotec ruins that have stood in these mountains for over a thousand years.

Washed | Mountain Water Decaf

El Cansado is decaffeinated using the Mountain Water Process, a completely natural and chemical-free method that uses pure glacial water from Mexico's highest mountain peaks to gently remove caffeine while preserving every layer of the coffee's original flavour.

No solvents or chemicals are used at any stage, just water, temperature and careful filtration. The result is a decaf that tastes exactly as it should, rich, complex and utterly satisfying.
