Daye Bensa Coop

This coffee is sourced from 279 dedicated farmers in the Keramo village area who are members of the Daye Bensa cooperative. Daye Bensa is renowned for its meticulous, quality-driven approach, producing microlots on a limited scale to ensure maximum focus on the beans.

Utmost attention is paid to traceability. When cherries are received, they are immediately separated by village. Each lot is then kept separate throughout drying, processing, and storage, with detailed labels noting the farm name, lot number, and delivery dates.

Sidama, Ethiopia

Sidama is one of Ethiopia's three trademarked coffee regions and is celebrated for its exceptional quality. Located in the fertile highlands of southern Ethiopia, the region's high elevations, fertile volcanic soil, and ample rainfall create the ideal conditions for growing coffee.

These high altitudes, often ranging from 1,500 to 2,200 meters above sea level, allow the coffee cherries to mature slowly. This extended ripening period helps the beans develop a greater density and a more complex, robust flavour. Coffees from Sidama are renowned for their profound complexity, often exhibiting bright, crisp acidity with delicate floral, citrus, and fruit notes.

Natural Processing

This is a meticulous natural process. Cherries are carefully hand-picked at peak ripeness and undergo an initial floating process upon arrival to separate any lower-quality or underripe fruit. Only the finest cherries are selected for natural processing.

These are then dried on raised African beds for 14 to 18 days under carefully monitored conditions, ensuring optimal drying and flavour development. After drying, the cherries are hulled locally and then transported to Addis Ababa for final sorting and quality grading.
