The coffee from Ayarza comes from a community of dedicated smallholder farmers, and Francisco Nájera is a perfect example of their spirit. At 30 years old, he has been in the coffee business for around 15 years, cultivating various small plots that cover just under one hectare in total. Despite facing adversity from the constant threat of coffee diseases, his entrepreneurial spirit has allowed him to excel. He also dedicates his time to running a nursery, providing healthy coffee saplings to other farmers and helping to strengthen the entire region.

Ayarza Region

The Ayarza region, found within the Santa Rosa department, is a place of dramatic landscapes and captivating legends. It is landmarked by the cold, deep blue waters of the Laguna de Ayarza, a volcanic crater lake so deep its bottom has never been found. While the region always held massive potential for specialty coffee, it took dedicated innovation to finally unlock it. Through investment in a local wet mill and experimentation with different processing methods, the true, exceptional quality of Ayarza coffee has been revealed.

At the cherry mill, only the ripest cherries are selected, undergoing a meticulous process of flotation, de-pulping, and screen sorting.
