Chiapas is Mexico's southernmost state and its most prolific coffee-growing region, producing nearly half of the country's total coffee output. The highlands are rich in rainfall and nutritious soil, and the coffee farms at high altitude are naturally shaded by a lush forest canopy that blankets the Sierra Madre de Chiapas mountains. Sitting at elevations that regularly exceed 1,700 MASL, the region benefits from cool temperatures, volcanic soils, and a climate heavily influenced by its proximity to Guatemala's famed Huehuetenango, a neighbour whose complexity it quietly shares. The strong influence of indigenous groups and cultures has long been the driving force behind smallholders' embrace of organic practices, as they are often in line with traditional growing philosophies and utilize similar if not the same techniques. The result is a region that produces coffee with a distinctive sense of place, grounded, honest, and shaped by generations of careful stewardship of the land.

40 Smallholder Families

Sakubel brings together 40 smallholder families from the highlands of Chiapas, each farming their own small plots with a shared commitment to organic practices that is deeply rooted in the region's indigenous agricultural traditions. Like many cooperatives born from this corner of Mexico, Sakubel reflects a collective model where individual farmers pool their harvests and knowledge, creating a lot that carries the character of an entire community. Their organic approach, free from synthetic inputs is not just a certification but a philosophy, one that prioritizes the health of the land as much as the quality of the cup.

WASHED PROCESSING

The washed process involves removing the outer skin and fruit from the coffee cherries before fermentation. After the cherries are depulped, the beans are fermented for 8 to 72 hours, depending on the conditions, to remove the remaining mucilage. The beans are then washed in fresh water and dried to the desired moisture content. This method enhances the coffee's clean, bright flavour and clarity.
