La Leona Coop

La Leona serves as the collective name for approximately 20 smallholder producers located in the San Marcos region. In this area, smaller growers often associate with cooperatives that operate their own wet mills, allowing the producers to deliver their cherries to a central location for consistent processing. This specific group is well known for their deep commitment to agronomy and improving their understanding of how their plantation processes directly affect the coffee. Over the years, they have worked tirelessly to strengthen their infrastructure and elevate the overall quality of their harvest.

Washed Processing

The washed process involves removing the outer skin and fruit from the coffee cherries before fermentation. After the cherries are depulped, the beans are fermented for 8 to 72 hours, depending on the conditions, to remove the remaining mucilage. The beans are then washed in fresh water and dried to the desired moisture content. This method enhances the coffee's clean, bright flavour and clarity.
