Cajamarca

This coffee comes from the highlands of northern Peru in the department of Cajamarca, a region rich in both history and agricultural abundance. The Andes mountains run through its landscape, and its capital city is one of the oldest in South America, once serving as a key center for the Incan empire.

This lot is from the Chirinos district within Cajamarca, an area offering exceptional high-altitude growing conditions from 1,500 to over 2,000 meters. Its volcanic soils and cool mountain climate allow the coffee cherries to mature slowly, resulting in a cup with rich, complex flavours and pronounced sweetness. The producers of the La Prosperidad cooperative leverage these ideal conditions with their dedication to sustainable farming, creating coffees that are a true reflection of Peruvian craftsmanship and excellence.

Washed Processing

This lot undergoes a unique Washed process mastered by the producers of La Prosperidad. After selectively handpicking only the ripest cherries, the coffee is placed in tanks to undergo an extended 36-hour fermentation before being washed.

This carefully controlled step is crucial—it refines the coffee's fruit-forward characteristics and builds a more layered sweetness, all while preserving the clean, vibrant, and bright profile that makes this Gesha so exceptional.
