During our visit this past August to Café Granja La Esperanza, one of the most renowned and pioneering coffee farms in the world, we saw firsthand what makes their coffee so exceptional. This Pacamara is a perfect example of their craft. Its unique and complex profile is developed through a careful double fermentation, followed by a slow, 28-day solar drying period that enhances its overall sweetness and character.

What is score?

Rigoberto Herrera

In 2007, Rigoberto Herrera took on the challenge of managing La Carleida, a farm in Panama’s Boquete region. Just a year later, he secured first place in the Best Coffee of Panama competition, a turning point in his career.

Inspired by this success, he brought Geisha seeds to Colombia, beginning a new chapter for Granja La Esperanza. Adapting this delicate varietal to Colombia’s climate was no small feat, but through dedication and innovation, he transformed the farm into a global leader in speciality coffee. Today, Granja La Esperanza is known for its rare varietals and exceptional cup quality, continually pushing the boundaries of coffee excellence.

Las Margaritas

Las Margaritas, one of Café Granja La Esperanza’s (CGLE) farms, is located in Caicedonia, Valle del Cauca, Colombia, and is defined by its unique microclimate. A flowing brook nourishes the verdant slopes, often shrouded in mist, creating ideal conditions for coffee cultivation.

Farm manager Juan Carlos oversees modernised processing facilities, prioritising efficient water use with a vertical demucilager and employing innovative fermentation techniques in their multi-compartment silo. While rejuvenating their Pacamara plot, Las Margaritas also cultivates Pink Bourbon and the recently released CGLE17 hybrid.

The farm further distinguishes itself by inviting visitors to experience the "Field of Dreams," an area designed to foster appreciation for the farm's unique ecosystem and promote environmental awareness.

Natural Processing

The processing for this Pacamara is a complex, multi-stage journey. At the wet mill, carefully picked cherries undergo a two-stage fermentation to build their unique flavour profile. First, the whole cherries ferment for 19–22 hours. They are then pulped and undergo a second fermentation for around 35 more hours.

Following this detailed fermentation, the coffee is briefly placed in a silo before being moved to solar drying patios, where it dries slowly for 28 days. The final, crucial step is a three-month storage period, which helps to stabilise the coffee and mellow any astringency from its freshness, ensuring a perfectly balanced and refined cup.
