Hidden among the misty peaks of Northern Oaxaca, the Sierra Flores de Magón acts as a sanctuary for heritage coffee. Its isolation and rugged topography have preserved classic varieties like Typica and Bourbon which thrive here under the native shade of the cloud forest. The unique climate is defined by constant moisture and cooler temperatures that significantly slow the cherry maturation. This allows the beans to develop a remarkable density and sweetness that truly reflects this distinct terroir.

Washed | Anaerobic

This method represents a unique fusion of techniques. After depulping, the beans are fermented in sealed, oxygen-free tanks before undergoing a traditional wash.

This specific environment captures the best of both worlds: it preserves the sparkling, clean acidity of a washed coffee while introducing the funky, wine-like depth typical of anaerobic fermentation. The result is a complex cup with layered sweetness and sharply defined flavours.
