    In northern Nicaragua, is known for its lush mountains and river-filled landscapes. The region has shifted from producing lower-grade coffee to focusing on specialty coffee, inspired by Expocamo. Coffee farming communities in areas like Cerro del Diablo, El Volcán Yalí, and Aranjuez now produce high-quality Arabica beans. Small producers in Jinotega have embraced new techniques to enhance the quality of their coffee, gaining recognition in the specialty market.

    The Mantiqueira de Minas region, located in the northern Serra da Mantiqueira Mountain range in Minas Gerais, Brazil, is known for producing unique, high-quality coffees. The area, covering 25 municipalities, is home to over 8,200 smallholder producers. Its distinct terrain and traditional farming methods contribute to exceptional coffee profiles. The region’s coffees reflect both its terroir and the commitment of local producers. Mantiqueira de Minas is officially recognized for its unique sensory qualities and rich coffee heritage. The region continues to evolve with a focus on innovative flavours.

    WASHED | NATURAL PROCESSED

    The washed process involves removing the outer skin and fruit from the coffee cherries before fermentation. After the cherries are depulped, the beans are fermented for 8 to 72 hours, depending on the conditions, to remove the remaining mucilage. The beans are then washed in fresh water and dried to the desired moisture content. This method enhances the coffee's clean, bright flavour and clarity.

The cherries are spread out in the sun and dried for several weeks, during which time the fruit’s sugars and flavours infuse into the bean.
